Tasting Notes: Brown butter returns with a peppery alter ego, this barrel is all about a punchy nose and spicy approach with a smooth, velvety, viscous palate that leans into dessert'o'clock. Pepper, candied ginger, a touch of cinnamon and clove greet you on the nose. The palate is sticky and rich, layered with brown butter, caramel, pralines and a touch of tobacco. Long finish, sweet and dessert forward all the way through with a pinch of cinnamon on its way out.

This cask was a beautiful, fruity rye on the nose and palate that turned into a long winded, brown butter, classic rye spice dream on the finish. The nose is all apple, pears, honey, baking spice, caramel candies and a pop of pepper. The palate is full of maple, brown butter, rich tobacco, a hint of sweet fruit and cream and then a long, bold finish. Really impressive viscosity and just the right amount of oak.

The nose is all cola, maple, tobacco, big ginger and rye spice with notes of clove, nutmeg and cracked pepper. The palate leans rich and dense, chewy and viscous and loaded with tobacco, baking spice, sweet oak, creme brulee and caramelized sugars. The finish is long, favoring the brulee, barrel char, and caramelized sugars. A perfect sip for after dark.

This single barrel Rye brings plenty of maple, a touch of cola sweetness and a rich herbal backbone. It isn't dilly like MGP, Sagamore delivers a great, herbal character on the palate: black tea, sandalwood, orange zest, a pinch of ango bitters. This pairs well with the middling tannins - there's plenty of oak without it drinking dry or tannic. Long finish, filled with brown sugar, orange peel, a light touch of blackberry and a faint, subtle prickle of peppercorn.

WhistlePig Ryedration II, this maple, tobacco, spice and pepper bomb is a big, bold rye with sweet, gentle, fruit undertones. While Ryedration leaned plum, I’m getting more blackberry, cherry, orange on Ryedration II. Bold maple, creamy tobacco, funky rye spice, black tea, honey and a light brush of bold tannin.

The nose on this barrel brings with it tons of maple, sweet cream, vanilla bean, peach cobber and warm apple crumble. The tannin shows through with more notes of baking spice: clove, nutmeg, a hint of cinnamon. Apple integrates well, showing plenty of oak dryness and pleasant complexity from the tannins. With as long as this finished, I'm thankful there's a good deal of extra oak here, it's holding together a really complex profile that needs dryness and structure to balance the heavy caramel and vanilla bean sweetness of the bourbon with the apple and savory baking spice profile of the brandy. The finish is incredible, its one of the longest finishes I've encountered on a bourbon and while most finishes remain a continuation of the palate of a bourbon, this one carries through more funky tobacco, rich maple, and apple notes that ebb and flow.

Produced from MGP's 95% rye mashbill, the bold baking spice, pepper, clove, maple and sweet cream blend elegantly with hefty tannin, sweet oak, and notes of apple butter, warm cinnamon, caramel candies and a satisfying pop of acidity to balance it all out. The proof is up there here, bringing with it rich viscosity and adding layers and layers to the combination of savory rye and sweet, brown sugar, apple butter.

This 51% rye is soft and buttery on the nose, full of rye bread, sweet cream, a pop of spice and clove, with a pinch of pepper and ginger. The palate softenes nicely, there's a moderate to low amount of dry oak, replaced instead with sweet creme brulee, spicy rye, a touch of apple bake, nougat and sweet oak. My favorite part is the finish, combining some sweet caramel and blackberry with spicy pepper, ginger and a kiss of rye bread.

Rich maple on the nose, root beer, cola, sweet and sticky toffee and salted caramel on the nose. There's a surprising amount of well developed oak here, co-mingled with rye spice, candied ginger, delicious baking spice and a pleasant brown sugar character. The palate on this barrel is loaded with brown sugar once more, sweet oak and punchy rye spice. The viscosity is off the charts, has this chewy, layered, syrupy texture that's really pleasant and decadent, paired nicely with a prickle of proof, oak, sweet buttercream and maple, toffee, nougat and a rye spice punch. The finish is looooong. Heavy on the oak, rye spice, maple, sweet cream and sticky caramels.

NOSE: Potent yet playful candy store aroma that's filled with childhood nostalgia. Everything from gummy bears, cotton candy, and strawberry shortcake to fruity bubble gum flows out of the glass. This sugar filled aroma is cut by sweeping swings of rye spice providing excellent contrast. It's a tight collection of scents that work well in tandem providing a striking impression. PALATE: A creamy medley of red summer fruits, sugary vanilla molasses, and a twinge of apricot brandy form a club you’ll want to get into. Its unique and striking flavor profile can be rather lavish and challenging at times. It’s the second and third sip where familiarity begins to step in and the whiskey's eccentric collection of flavors begins to click. Equal parts sugary, fruity, and spicy, it is able to come together and work. FINISH: The fruit medley of the palate starts to wear off on the finish, replaced by slight dryness, and additional rye spice and heat. This is where the whiskey’s proof does it a bit of a disservice as the heat can be surprisingly punchy here. A touch of water does the whiskey wonders allowing the flavors to slightly open up while mellowing the heat. Nose: Bright apple, pear, pecan, syrupy and sweet. Candied apples, cinnamon, pear and a delightful rich, complexity. My main gripe with normal Seagrass was a less than captivating nose, and this is nothing but captivating. It's stealthy, you'd never know it's north of 60% ABV. Taste: Rich on the palate, a great blend of fruitiness, oaky and powerful spice. Rich, a great blend of tannin, fruity rum, syrupy goodness. Baked apple, maple, pears, a big almond note, dry rye spice and clove. A touch of tobacco. This combines what I loved about normal Seagrass, and combines my favorite aspects of Canadian rye as well. Finish: Long, powerful finish. A touch hot, but complex, nothing but boldness. Nothing short of perfection. ~T8ke

Bold and rich on the nose: this leads with dessert, oak and soft fruits. Maple, brown butter, caramel chews and creme brulee open up the nose. There’s light fruit, fig and tobacco waft together. The palate is opulent and viscous - you can taste the viscosity brought in from the oldest components, while the dessert character remains center stage: rich pipe tobacco, nougat and butterscotch, caramels and a hint of fig, stewed fruits, vanilla bean, waffle cone and faint slivered almond. It’s proofed nicely, and the finish carries for a long time. It’s not drying - the oak is present and pleasant, it holds onto the finish, carrying brown butter, waffle cone and wafer cookie with caramels, creme brulee, cocoa and rich butter pecan notes for ages. ~T8ke

Thick and rich, dense on the nose and palate. The color on this whiskey tells a lot of stories as well. Rich and chewy, this single barrel is full of caramel, honey, sweet buttercream, a waffle batter and ginger snap dessert character on the palate. The finish is long, impressively desserty with the introduction of sweet oak, a touch of drying baking spice and tannin. Drinking well beyond their age. ~T8ke
