The palate is opulent and viscous - you can taste the viscosity brought in from the oldest components, while the dessert character remains center stage: rich pipe tobacco, nougat and butterscotch, caramels and a hint of fig, stewed fruits, vanilla bean, waffle cone and faint slivered almond. It’s proofed nicely, and the finish carries for a long time. It’s not drying - the oak is present and pleasant, it holds onto the finish, carrying brown butter, waffle cone and wafer cookie with caramels, creme brulee, cocoa and rich butter pecan notes for ages. ~T8ke
